Ever have one of those days where you want to sit on your couch, zone out and ignore life? Me too.

After three point five busy days of work in Denver, a blizzard, cancelled flights and wet socks (gross), I am finally on my way home. On days like this, when I start thinking about making supper, it makes me want to curl up in a ball and go to sleep. But, I have to eat. The Ninja needs to eat and if I don’t cook I get stuck doing the dishes from his kitchen exploits.

To combat all of this, I have been creating a rolodex of easy-as-Cheetos recipes (Cheetos are way easier than pie) that I can turn to when I have had a monumentally crazy week. Here is one of my favorite so far – a three-ingredient beef roast (well, four if you count the actual roast) that is juicy and seasoned to perfection. We have a rule in our house, which I try like hell to enforce, that no one is allowed to put sauce or seasoning all over a dish until a bite is actually tried. I mean, isn’t that simple etiquette to try the meal before adding extra seasoning? Well, the Ninja took one bite of this roast and PUT THE A-1 BACK IN THE FRIDGE! If that’s not proof enough, I don’t know what more I can say to convince you.

Without further ado, here’s your next weeknight dinner when you’re scrambling for an idea and have been delayed by a blizzard, run out of clean clothes and have had to use your socks as gloves to scrape eight inches of snow off your rental Jeep. Enjoy that image and enjoy the beef roast!

INGREDIENTS

2-3 lb beef roast (use a roast with “round” in the name if looking for a leaner cut)
1 packet of dry Italian dressing mix
1 packet of ranch dressing mix
1 packet of brown gravy mix
1 cup of water

Whisk the three seasoning packets together with water. Place beef roast in the crockpot and pour mixture over the top. Cook on low for 6 hours or high for 3 hours. Remove when beef roast is a perfect 145 degrees and don’t forget that meat thermometer! You can spoon the gravy from the crockpot onto the beef for even more delicious flavor. #gravyislife

You will not regret making this for your family and if you happen to have leftovers, this is a great #plannedover meal for the next night.
