Easy Crockpot Cherry Coke Pork Roast

There’s a few things to know about my cooking style:

  • I like simple recipes
  • Meat must always be part of the main course
  • My crockpot (affectionately known as Crockie) is my kitchen bff

Thus, when fall rolls around even though I have more time for cooking, I don’t necessarily have to use that time for cooking since I am armed with an arsenal of easy and nutritious ranch recipes to keep my family well fed. And a few weeks ago, I added another delicious weapon to that arsenal: easy crockpot cherry coke pork roast.

This was originally a marinade for a roasted pork (aka in the oven) recipe but since I don’t like for my house to get hot, particularly in late summer, I retrofitted it for the crockpot and I have zero regrets. I’ve made this twice in the past month and if I continue to make it every other week, my husband would have zero complaints.

All you need is:

plated pork roast with broccoli and pasta
Moist and flavorful – just perfect!
  • 1/4 c. soy sauce
  • 1/4 c. dark brown sugar
  • 1/4 c. cherry cola
  • 3 Tbsp olive oil
  • 1 tsp minced onion
  • 1 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 tsp minced garlic
  • 2 lb. pork roast

This will make about 1 c. of marinade for a 2 lb pork roast – we use a 3.5ish lb. pork roast and therefore, I double the recipe.

Mix all ingredients together and put in a plastic bag with the pork roast and let marinade for at least two hours. Place in the crockpot and cook on high for 3 hrs (or until 145ºF). While we used pork roasts, you could use pork chops as well and bake them in the oven. There will be a lot of yummy juices and flavors in the crockpot once you remove the roast – we usually drizzle it over the pork or dip bites in it kind of like a french dip.

I can’t rave about this meal enough – pair it with your favorite veggie, some cottage cheese (one of my personal faves) and a dinner roll for a complete and out-of-this-world amazing meal.
