Baked Pork Chops and Savory Rice

Spring is here and spending hours in the kitchen after being cooped up all winter is the last thing I want to do. I have a list of recipes on the side of the fridge that are quick and easy but are also super delicious. This pork chop recipe is one of our family favorites because it’s tasty and I can also pop it in the oven and then get 20 minutes of other chores done while it cooks. Serve with a veggie side and BAM! dinner is served.

BAKED PORK CHOPS AND SAVORY RICE

  • 2-3 pork chops, 1″ thick
  • 2 c. white rice
  • 2 c. beef broth
  • vegetable or canola oil
  • seasoning salt (we use Tom’s Steak Rub from Faith Family & Beef)

Season pork chops and brown in oil over medium-high heat. Cook just long enough to brown and get a nice crisp on each side (approx 1-2 minutes on each side). Remove chops from heat.

In 8×10 baking pan, combine rice and beef broth – stir. Place cooking rack over rice and set chops on top. Bake at 350°F for ~18 minutes or until the chops reach 145°F. If the chops are thicker, it could take longer.
